Lactose Free Lemon Pancakes

Serves

Dry Ingredients

  • 180g flour
  • 2 tbsps poppy seeds
  • 1 tsp baking powder

Wet Ingredients

  • 230ml Benna Lactose Free Milk
  • 150g Benna Lactose Free Natural Yogurt
  • 1 egg
  • 2 tbsps honey
  • 1 tbsp olive oil
  • 1/2 tsp vanilla extract
  • Juice from one lemon
  • Zest from one lemon

Instructions

  1. In a bowl mix together the milk, vanilla egg , honey and yogurt.
  2. Add the oil, lemon zest and lemon juice. Mix well.
  3. Mix together the dry and wet ingredients.
  4. On a non stick pan add a bit of oil
  5. Add a bit of pancake batter on the pan and cook for 1-2 minutes or until it starts bubbling up.
  6. Top them with honey , more yogurt and lemon slices.
