Iced Coffee Marble Muffins

Serves

Wet Ingredients

  • 2 eggs
  • 120ml Benna Iced Coffee
  • 120ml maple syrup or honey
  • 60ml melted Benna Unsalted Butter
  • 1 tbsp vanilla

Dry Ingredients

  • 250g self raising flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp cacao powder

Instructions

  1. In a bowl mix together the wet ingredients.
  2. In an other bowl mix together the flour, baking soda and baking powder.
  3. Transfer the flour to the wet ingredients. Mix well.
  4. Divide the batter into two equal portions. In one portion add the cacao powder and stir.
  5. Fill each muffin cup with 3 tbsp one of each batter. Use a toothpick to make a swirl.
  6. Bake for 20 minutes on 200C or until a toothpick inserted into the center of one of the muffins comes out clean.
