Pumpkin Spice Muffins

Ingredients

  • 50g of Benna Pumpkin Spice Milkshake
  • 250g of pumpkin purée (chop the pumpkin into cubes steam or boil it, let it cool completely and blend it)
  • 2 eggs
  • 2 tbsp of maple syrup
  • 120g of light brown sugar (more for topping)
  • 35g of olive oil
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 140g plain flour
  • Pumpkin seeds

Instructions

  1. Preheat the oven on 180C
  2. In a large bowl mix together the eggs, milk, oil, vanilla ,maple syrup, sugar and pumpkin puree
  3. Add the flour, baking soda, baking powder and cinnamon. Mix until smooth
  4. Pour in a bit of mixture into each muffin cup.
  5. Sprinkle the top of the muffins with brown sugar and pumpkin seeds.
  6. Bake for 20 to 25 minutes, until firm to touch and a toothpick comes out clean.
