Pumpkin Spice Muffins

- 50g of Benna Pumpkin Spice Milkshake
- 250g of pumpkin purée (chop the pumpkin into cubes steam or boil it, let it cool completely and blend it)
- 2 eggs
- 2 tbsp of maple syrup
- 120g of light brown sugar (more for topping)
- 35g of olive oil
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 140g plain flour
- Pumpkin seeds
Instructions
- Preheat the oven on 180C
- In a large bowl mix together the eggs, milk, oil, vanilla ,maple syrup, sugar and pumpkin puree
- Add the flour, baking soda, baking powder and cinnamon. Mix until smooth
- Pour in a bit of mixture into each muffin cup.
- Sprinkle the top of the muffins with brown sugar and pumpkin seeds.
- Bake for 20 to 25 minutes, until firm to touch and a toothpick comes out clean.
