Spinach and Irkotta Roll Ups

Ingredients

  • 250g (1 tub) Benna Light Irkotta
  • 70g fresh chopped spinach
  • 100g shredded mozzarella
  • 50g cooked leeks
  • 2 eggs
  • Puff pastry sheet
  • Salt and pepper
  • Sesame seeds

Method

  1. In a bowl mix together the spinach, Benna Light Irkotta, 1 egg, mozzarella, leeks, salt and pepper.
  2. Roll out the puff pastry sheet and place the irkotta mixture (do not over full) fold the pastry over the filling and cut in half then into small rolls.
  3. Place the rolls on a baking sheet, brush the top with beaten egg and sprinkle sesame seeds on top.
  4. Bake for 20 minutes on 200C or until golden.
