Spinach and Irkotta Roll Ups

- 250g (1 tub) Benna Light Irkotta
- 70g fresh chopped spinach
- 100g shredded mozzarella
- 50g cooked leeks
- 2 eggs
- Puff pastry sheet
- Salt and pepper
- Sesame seeds
Method
- In a bowl mix together the spinach, Benna Light Irkotta, 1 egg, mozzarella, leeks, salt and pepper.
- Roll out the puff pastry sheet and place the irkotta mixture (do not over full) fold the pastry over the filling and cut in half then into small rolls.
- Place the rolls on a baking sheet, brush the top with beaten egg and sprinkle sesame seeds on top.
- Bake for 20 minutes on 200C or until golden.
