Baked Chicken Irkotta Meatballs

Ingredients

  • 200g Benna Light Irkotta
  • 500g chicken breast
  • 1 medium sized red onion
  • 3 garlic cloves
  • 50g shredded Parmesan cheese
  • 3 tbsps breadcrumbs
  • 1 tsp lemon and pepper
  • 1 egg
  • Rosemary (optional)
  • Fresh parsley

Instructions

  1. In a food processor or blender add the chicken, onion and garlic. ( you can also buy ready minced chicken, chop the onions and garlic into small pieces and mix everything)
  2. Add the ricotta, egg, breadcrumbs, lemon pepper, Parmesan and fresh herbs. Mix well.
  3. Add olive on your fingers so the mixture doesnโ€™t stick and roll them into balls.
  4. Place them on a parchment paper add olive oil salt and pepper.
  5. Bake them for 15 minutes on 180C turn the meatballs and bake for 10 more minutes.
