Ġbejniet Tuna Potato Patties

Serves

 Ingredients 

  • 1 Ġbejna Mħawra
  • 2 cans tuna
  • 2 boiled medium sized potatoes
  • 30g breadcrumbs
  • 1 small red onion
  • 1 stick spring onion
  • 2 eggs
  • 1tbsp mustard
  • 1tsp garlic powder
  • Lemon juice from half a lemon
  • 2tbsp fresh dill
  • 2tbsp fresh parsley
  • Salt and pepper
  • Olive oil

Instructions

  1. Boil the potatoes until soft and tender. Let them cool for a few minutes and transfer them into a large bowl.
  2. Use a fork to mash the potatoes, add the tuna , onions, fresh herbs, garlic powder, breadcrumbs, mustard, eggs , fresh lemon juice, salt and pepper.
  3. Mix until everything is well combined.
  4. Shape them into patties
  5. Add them on a sheet pan with olive oil.
  6. Bake them for 20 minutes on 200C and flip them over. Bake them for 15 more minutes.
