Lactose Free Cherry & Plum Galette

Ingredients

150g of all purpose flour + 1 tbsp

30g of brown sugar + 2 tbsp

100g Benna Lactose Free Unsalted Butter (cold and cut into cubes)

2 tbsps ice cold water

2 large plums chopped into small pieces (1 yellow and red )

100g cherries

2 tbsp brown sugar

Lemon zest
-
Fresh mint
Instructions
- In a food processor add the flour, 30g of sugar, water and butter. Mix for a few seconds. Combine with your hands until it forms a soft smooth dough
- Refrigerate 1 hour.
- In a separate bowl add the fruit, 2 tbsp of sugar, lemon zest and 1 tbsp of flour. Mix well.
- Preheat the oven on 180C
- After 1 hour transfer the dough on a parchment paper, add a bit of flour and roll into a circle. ( you need to work fast as the dough will start melting because of the butter)
- Add the fruit mixture in the middle and fold the pastry edges on top of the fruit leaving the center open.
- Bake for 30 minutes
- Let cool completely, add powdered sugar on top, vanilla yogurt or ice
