Lactose Free Cherry & Plum Galette

Serves

Ingredients

  • 150g of all purpose flour + 1 tbsp

  • 30g of brown sugar + 2 tbsp

  • 100g Benna Lactose Free Unsalted Butter (cold and cut into cubes) 

  • 2 tbsps ice cold water

  • 2 large plums chopped into small pieces (1 yellow and red ) 

  • 100g cherries 

  • 2 tbsp brown sugar  

  • Lemon zest 

  • Fresh mint 

Instructions

  1. In a food processor add the flour, 30g of sugar, water and butter. Mix for a few seconds. Combine with your hands until it forms a soft smooth dough
  2. Refrigerate 1 hour.
  3. In a separate bowl add the fruit, 2 tbsp of sugar, lemon zest and 1 tbsp of flour. Mix well.
  4. Preheat the oven on 180C
  5. After 1 hour transfer the dough on a parchment paper, add a bit of flour and roll into a circle. ( you need to work fast as the dough will start melting because of the butter)
  6. Add the fruit mixture in the middle and fold the pastry edges on top of the fruit leaving the center open.
  7. Bake for 30 minutes
  8. Let cool completely, add powdered sugar on top, vanilla yogurt or ice
