Mozzarella Pesto Pasta

- 200g Benna Pizza Mozzarella
- 250g pasta
- 140g pesto
- Olive oil
- 220g chopped Zucchini
- 220g chopped Cherry Tomatoes
- 3 garlic cloves
- Parmesan cheese
- Fresh parsley
Instructions
- 1. In a baking tray add the zucchini, cherry tomatoes, garlic and olive oil. Mix well.
- Bake the veggies for 15 minutes or until tender.
- Boil the past 3 minutes less the time it says on the packet.
- In the same baking tray mix together the veggies pasta and pesto.
- Cut the mozzarella into cubes and place it in between the pasta, sprinkle some Parmesan and parsley on top. Bake for 7 to 10 minutes or until the mozzarella is melted.
