Orange and Almond Muffins

Ingredients

  • 100g Benna Light Natural Yogurt
  • 75g melted cold Benna Unsalted Butter
  • 120g plain flour or gluten free flour
  • 100g almond flour
  • 1 tsp baking powder
  • 160g honey or maple
  • 1 tsp vanilla extract
  • Juice and zest from one orange
  • Sliced almonds

Instructions

  1. In a large bowl mix together honey, eggs , zest , juice , vanilla and yogurt.
  2. Add the butter slowly and mix.
  3. Add the Baking powder, almond flour and flour. Mix well
  4. Scoop out a bit of batter into each muffin mold or muffin cases.
  5. Add sliced almonds on top and bake on 200C for 20-25 minutes and a toothpick comes out clean.
